Among the paintings on display are his four seasons, probably his most well known work, in which each profile is composed in different seasonal fruit. His works could also be portraits of such famous people as the Emperor Rodolpho II whom he depicts as Vertumnus, the Greek God of Harvest and abundance, or members of the court like the Lawyer or the Librarian made up of books and scrolls, or even such menial servants as the cook (whom it is said he despised) and illustrated with plates and vegetables.

He was very popular during his period but fell into obscurity until being resurrected during the 19th century and copied by surrealists like Salvador Dali.
